Slow-Cooker Peanut Butter, Millet & Oat Granola

Makes about 4 cups granola


Ingredients:


2/3 cup peanut butter

¼ cup honey

1 Tablespoon butter or coconut oil

1 teaspoon vanilla extract

2 cups old fashioned oats

¼ cup raw sunflower seeds

¼ cup uncooked millet

2 Tablespoons chia seeds

2 Tablespoons ground flax

1/2 cup peanuts

¼ cup shredded coconut, optional


Instructions:


  1. In a microwavable bowl or 2-cup Pyrex liquid measuring cup, add the peanut butter, honey, butter and vanilla. Microwave on HIGH for 45 seconds to 1 minute, until soft. Stir together until blended; set aside.

  2. Spray the slow cooker crock with cooking spray. Add the oats, sunflower seeds, millet, chia seeds and ground flax to the crock and stir to mix. Pour the peanut butter mixture over the grain mixture and stir well to combine.

  3. Cover the slow cooker and set the power to HIGH. Cook mixture for 30 minutes; uncover, stir well, then re-cover and cook another 30 minutes on HIGH.

  4. Stir again, then prop the lid open a bit with the handle of a wooden spoon. Switch the power to the LOW setting and let granola cook 1 hour more.

  5. Turn granola out onto a sheet pan to cool completely. Add peanuts and, if desired, stir in the coconut.
